Quick & Delicious Rice with Shiitake Mushrooms and Fresh Chives (Recipe)

This is one of the easiest yet most delicious rice recipes you will stumble upon. It’s become an absolute favorite in my family! It’s perfect for those ‘let’s just wing it’ moments or when you’re simply craving a fuss-free, yet oh-so-delicious meal.

The shiitake mushrooms are super nutritious and provide an undeniably addictive umami flavour. Nutritionally speaking, shiitake mushrooms are a good source of vitamins (especially B vitamins like B2, B3, and B5) and minerals such as copper, manganese, and zinc. And in combination with the fresh chives, it’s an explosion of flavours! Trust me, it’s worth finding those fresh chives. They make all the difference!

You can serve this rice dish with pretty much any source of protein, from fish and meat to tofu and beans.

Without further ado, let’s dive right into this cozy and comfy fall recipe!

Shiitake Mushrooms & Fresh Chives Rice

Servings 3 people

Ingredients
  

  • 1 cup uncooked white rice (or roughly 3 cups of cooked rice)
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 250 g fresh shiitake mushrooms (diced)
  • 1/2 tsp flower of salt (or sea salt)
  • 1 Tbsp soy sauce
  • 6 Tbsp chopped fresh chives

Instructions
 

Prepare the rice (skip this step if you already cooked white rice in a rice cooker)

  • In a small pot, rince the rice, changing the water at least once. Then, using the same measuring cup, add 2 cups of water to your rice and bring to a boil.
  • Once it starts bubbling gently, turn the heat down to low and cover with a lid. Leave for 10 to 13 minutes or until all the water has been absorbed (you can gently tilt the pot to check).
  • Remove from heat and keep covered for another 10 minutes. Then remove the lid and fluff up the rice with a fork or a silicone spoon.

Sauté the mushrooms

  • In a frying pan, add the olive oil, butter, shiitake mushrooms and salt. Sauté over medium-high heat for 8-10 minutes until the mushrooms are caramelized and stop releasing water.
  • Reduce heat to low and add the soy sauce. Cook for another 2-3 minutes.

Combine all the ingredients

  • Remove frying pan from heat. Add the rice and fresh chives to the mushrooms and mix it all together.

Notes

Optional: For added color and flavor, you can sprinkle some fresh pomegranate seeds on top before serving!
