This light salad is a particularly refreshing snack during the summertime. It is extremely easy to make and a great healthy alternative if you want to satisfy a sweet tooth.
Did you know? Mangoes are rather low in calories for the nutritional punch that they provide: 3/4 cup of sliced mangos is just 70 calories. As for the raw cherry tomatoes, they provide an excellent source of antioxidants, which protect us against ageing and play a key role in the prevention of many ailments, including heart disease and cancer.
As a side dish, this salad pairs wonderfully with fish and stuffed pastries. You can also turn it into a salsa for chips or fish tacos, in which case I would recommend cutting the ingredients into smaller pieces and adding some avocado slices to it with an extra squeeze of lime and a drizzle of your favourite hot sauce.
Mango & Cherry Tomato Salad
Ingredients
- 1 large ripe mango (or 2 medium mangoes) (peeled & cut into medium-sized pieces)
- 15 cherry tomatoes (cut in half)
- 1 tsp apple cider vinegar
- 4 tsp olive oil
- juice of a lime
- 3 tsp fresh parsley (finely chopped)
- 2 1/2 tsp red onion (minced)
- salt and pepper (to taste)
Instructions
- Combine all the ingredients in a large and mix well.
- Chill in the fridge before serving.
