Mango & Cherry Tomato Salad

Ingredients
  

  • 1 large ripe mango (or 2 medium mangoes) (peeled & cut into medium-sized pieces)
  • 15 cherry tomatoes (cut in half)
  • 1 tsp apple cider vinegar
  • 4 tsp olive oil
  • juice of a lime
  • 3 tsp fresh parsley (finely chopped)
  • 2 1/2 tsp red onion (minced)
  • salt and pepper (to taste)

Instructions
 

  • Combine all the ingredients in a large and mix well.
  • Chill in the fridge before serving.
