ripe mango (or 2 medium mangoes)
(peeled & cut into medium-sized pieces)

cherry tomatoes
(cut in half)

apple cider vinegar

olive oil
juice of a lime

fresh parsley
(finely chopped)

red onion
(minced)
salt and pepper
(to taste)
Instructions
Combine all the ingredients in a large and mix well.
Chill in the fridge before serving.
